Still haven't found time to figure out how to properly process and analyze the contents of the files (I'm kind of guessing conversion to json and then using jq will be easiest, as I've found no good tools to work directly with the plists), and what parameters may have effect.

I have managed to rule out one of the variables, and that is the time the computer sleeps. Just letting it go to sleep and comining back 15 minutes later is roughly as bad as if it has been asleep for a full day.
However, this variable goes a bit hand in hand with another one that has become more apparent; The uptime of the Orion process itself. Having the worst of these slowdowns, and then restarting Orion, the next few times you wake your computer from sleep it will be unaffected. After a day or two, it starts getting back to the sluggish state again at the unlock.
Still tracking, will see if I can find any factual evidence of this in the files I'm snapshotting for each event.
