Running different instances

I use different instances of Brave (previously Chrome) for different clients.

I cannot figure out how I would do this in Orion.

I want a sandbox around each one, so each has its own bookmarks, history, and cookies.

I cannot figure out how to start multiple instances. Is profiles the answer? Can I switch between profiles using Cmd+Tab and between windows within a profile using Cmd+`?

Yes, you should be using profiles. Profiles are completely isolated instances of the same app, with complete sandboxing of data, including bookmarks, history, and cookies.
