Set default encoding

How can I change the default encoding from Western (ISO Latin 1) to Unicode (UTF-8) like Safari can? I can't see any preferences to do this. Attaching screen grab from Safari's advanced preferences showing this option.

Orion, OS version; hardware type:

Jimothy You do not assume that it missing is a bug, but a feature that needs to be developed 🙂 Every single setting, menu item or interaction in Orion needs to be built from scratch. The "only" thing that Orion gets for free is the web rendering engine.
