The "Data Saver" option isn't just a boon for battery life, but also for privacy. But, as noted when you turn it on, it does break some sites.

It would be great if this could be toggled on globally, but then overridden on a per-site using the "Website Settings". Otherwise, when a website is encountered that doesn't work with Data Saver, the setting needs to be disabled for ALL sites, and then the user needs to remember to turn it back on once finished.

yes please! I am running currently Brave as default iOS browser, and the equivalent functionality is like this:
I have all toggles off, then when I need it I manually toggle the javascript (for example) toggle on for a site. This way running with js disabled keeps me safe, while enabling js per site makes remembering the site being usable.
this should be prioritized, please 🙂
